Not only is it delicious, but it's also healthier than traditional banana bread recipes because we're creating our homemade version, so no unhealthy ingredients are being added. I've happened to have two very over-ripe bananas sitting on my countertop, and I usually like to freeze them for smoothies, but today, I've been craving some apple butter banana bread. And since I also had some apple butter in my fridge, I decided to combine them, I mean, why not? A classic twist to a classic recipe. If you haven't tried this version yet, I urge you to try it!


Apple Butter Banana Bread Ingredients

For the Bread

  • Coconut Sugar. It's less sweet than granulated sugar, and much healthier. Plus, it add almost a nice little nutty flavor.
  • Unsalted Butter. Use softened butter for the ultimate soft and moist texture.
  • Bananas and Apple Butter. The main ingredients that you can't go without.
  • Eggs. Eggs give stability to cakes, cupcakes, breads, and cookies.
  • All Purpose Flour. You can use gluten free flour if you prefer.
  • Baking Powder and Baking Soda. These will allow your bread to rise in the oven.
  • Walnuts. If you prefer not to add these in, you can opt out. But I highly recommended it! It will add that crunch with every bite.
  • Spices. I used cinnamon and nutmeg.
  • Vanilla Extract. Don't underestimate this secret ingredient!

For the Walnut Streusel Topping

  • Dark Brown Sugar. Add a nutty sweetness. Really a wonderful flavor for the topping.
  • Walnuts. You can opt out. But it's really good if you don't. It's almost like a decoration:)
  • All Purpose Flour. It's not streusel without some flour.
  • Ground Cinnamon. A small hint of cinnamon never hurt anybody!
  • Unsalted Butter. It will add a buttery and crispy texture after the bread is done baking.


How To Make Apple Butter Banana Bread

Preheat oven to 350F. and spray or oil an 8"x5" load pan. And gather your ingredients.

In a medium mixing bowl, sift together 2 cups flour, 1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp ground cinnamon, and 1/4 tsp ground nutmeg.

In a large bowl, mash your very ripe bananas.

Add 1 cup coconut sugar to the bananas, and mix until smooth.

Add in your eggs and softened butter, mix to blend well.

Add in your flour mixture to the banana mixture and blend well. Set aside.

Add your vanilla extract to the apple butter, set aside.

Make your walnut streusel by adding in all of your ingredients to a small bowl. Mix until the mixture looks like bread crumbs or is crumbly.

In your loaf pan, add half of the banana batter, spread evenly.

Pour in your apple butter on top, roughly spread.

Add in the rest of your batter to cover up the apple butter.

Spread your walnut streusel evenly on top.

Place raw apple butter banana bead in oven and bake in the preheated oven for 45-50 minutes, until golden brown or toothpick comes out clean.

Can You Freeze Apple Butter Banana Bread

Yes you can! Before freezing, allow to cool off completely on a wire rate or plate. Once cool, wrap the bread in plastic wrap, then place in a freezer safe ziplock bag. Freeze up to 2 months, 3 months at best.

To thaw, leave in your fridge overnight, or on the countertop for 12-24 hours.

Directions
