Paleo Chewy Chocolate Chip Cookies

Ever wanted the cookie, but without the gluten and sugar?? These soft and chewy chocolate chip cookies are ridiculously easy to make, and are gluten-free and lightly sweetened with coconut sugar. The edges are nice and crispy, and the center is so moist and studded with amazingly delicious sugar-free chocolate chips! Made with only 5 ingredients along with just a few pantry staples!


Homemade Paleo Baking Flour Mix

If you don't have paleo flour, no worries! You can make it at home with a few ingredients you might have at home. Combine these ingredients, and then store in an air-tight container.


Using Coconut Sugar in Cookies

If you don't have coconut sugar, you can swap it out for cane sugar 1:1 for almost any recipe. Or use Monk Fruit. I wouldn't use white sugar because it is highly processed and very unhealthy for you. Coconut sugar is a very good natural paleo sweetener, and it's also lower on the glycemic index than Cane Sugar. Check out my sugar blog post for more info.

Ingredients

Directions

  1. Preheat oven 350F. Line your baking tray with parchment paper or silicone mat.
  2. In a medium bowl, Combine paleo flour mix, baking soda, and 1/4 tsp of salt. Set aside.
  3. In another bowl, beat the sugar and butter together for 1 minute on high. Add the almond butter, vanilla, and beat for another 15 seconds to combine. Add the egg and beat to combine once again.
  4. Add in the dry ingredients, stir with a spatula until thoroughly mixed. Add in the chocolate chips, if using. Cover the batter with plastic wrap, and chill for at least 30 minutes, or even overnight.
  5. Use a cookie scooper or spoon, and place the dough balls a few inches on a sheet tray. Bake for 13 minutes, or until golden brown. Let it cool on the sheet tray and enjoy!
