These S'more Chocolate Chunk Cookies will become your new number one favorite cookie! No joke. They are the perfect crowd pleaser and bring the joy of summer, fall, and winter at your fingertips! These chewy, marshmallowy cookies are so decadent and have all the classic campfire elements without the mess! With School out for the holidays, don't hesitate to make a batch of this for the kiddos!


S'more Ingredients

  • Butter. This recipe needs melted butter. Melt the butter, and cool just until it isn't steaming hot anymore! This will let your cookies keep their shape in the oven.
  • Sugars. I used brown sugar and coconut sugar. The brown sugar will give it a nice texture and a beautiful color. The coconut sugar will give your cookies a nice nutty flavor, and it is better than using granulated sugar. Making your cookies not overpoweringly sweet.
  • Egg. You could keep the egg at room temperature, or add it in cold.
  • Hot Water. This will give the s'more cookies a little bit of extra moisture.
  • Flour. I used all-purpose flour for this recipe. You can use Bob's Red Mill Gluten Free Flour Blend for a gluten free option. I haven't tried almond flour for this recipe yet.
  • Baking Soda. It will allow your cookies to rise in the oven.
  • Chocolate Chunks. I used Hu Chocolate Chunks. They are gluten free and sugar free. You can use any chocolate you have on hand.
  • Marshmallows. Mini Marshmallows are best for this recipe, but you can cut jumbo marshmallows into 4-6 pieces as well!


Gluten Free Cookie Option

This recipe can totally be made gluten free! Though I haven't experimented with almond flour yet, you can use Bob's Red Mill Gluten Free Flour. One thing to consider is make sure the chocolate and marshmallows are also gluten free. Hu Chocolate Chunks are a great chocolate option. Try Dandies Marshmallows for a vegan/gluten free option as well!


How To Make Chocolate Chunk S'more Cookies

Gather your ingredients.

In a large bowl, mix together your sugars. Add in the egg. Mix well. Add in your water, mix again.

Add in the flour. baking soda, and salt. You can do this in two increments. Mix until well combined.

Fold in your chocolate chunks. Leaving about a handful out.

Chill the cookie dough for at least 15 minutes. For the butter to stiffen. While it's chilling, preheat your oven to 350F. Line two baking sheets with parchment paper. Scoop out about a tablespoon of cookie dough into your hand. Press a few marshmallows in, and roll back into a ball. Flatten slightly and place onto your cookie sheet 1 1/2" to 2" apart. Press in a few of the reserved chocolate chunks into your cookie dough.

Bake for 13-15 minutes. The cookies should be slightly golden brown. If you want them rounder, use a circle cookie cutter to round them while they're still hot. Allow them to cool for five minutes in the pan, before transferring them onto a cooling rack. Enjoy!

  • If you want to make gluten free s'more cookies, you can use Bob's Red Mill Gluten Free Flour. I haven't tested them with almond flour yet.
  • You can also cut regular jumbo marshmallows into 4-6 pieces, if you don't have mini marshmallows.
  • I used HU chocolate chunks for this recipe. Semi-Sweet chocolate chips will also work!
