This is a quick and easy Chicken Cacciatore made in the instant pot with a side of fresh and tender cauliflower. The entire dish is low carb, and the chicken falls right off the bone. By the end of this recipe, the instant pot will instantly become your best friend!

Now that winter is upon us and we are all craving the hearty and steamy comfort foods, this chicken recipe will make everything happen! With it being made in the instant pot, it makes for an easy clean up! The chicken is pressure cooked with white wine, veggies, and delicious canned tomatoes!

With just 10 minutes in the pot, the falling off the bone chicken drumsticks is served with leftover tomato sauce that has been infused with all those yummy flavors and cooked with the cauliflower, putting dinner on the table in less than 30 minutes!

Can I Use My Crock Pot for Chicken Cacciatore?

Yes you can. You can follow the recipe exactly as written, only set the cooking time to 7 hours on low. That way, the chicken will be nice and tender, and the sauce will be full of all those nutritious flavors. If your crock pot doesn't have a brown setting, you can skip that step and cook everything in the pot.

What can I Serve With Chicken Cacciatore?

If you're eating low carb or keto, its nice to have this served with crunchy vegetables such as a salad or even Crispy Brussels Sprouts made in the oven with a drizzle of balsamic vinegar. Or with a Roasted Spaghetti Squash.

For my family, I enjoy serving the chicken drumsticks with freshly cooked rice, pasta, or even mashed potatoes, for a non keto/low carb diet.

  1. Pre-heat the instant pot on Saute setting and season the chicken drumsticks with salt and pepper on all sides. Add a tbsp of oil into your hot instant pot along with the chicken. Sear the chicken for 3-4 minutes on each side, or until golden brown. Remove the chicken and turn the heat down to medium saute setting.
  2. Add another 2 tsp of oil to the pot if needed. Add the onions, celery, zucchini, oregano, a pinch of salt, and some pepper. Mix well and cook for about 10 minutes. Add in the garlic and cook for 2 minutes. Add in your tomato paste and cook for one more minute then add your chicken back into the pot, with the cooking wine, if using, broth, can of tomatoes, bay leaf, 1/2 tsp salt, and a pinch of pepper. Set pressure cooker on high for 10 minutes. Make sure it's on "sealing".
  3. After 10 minutes, let the instant pot sit for 10 minutes so the pressure can release naturally. Then open the valve to release the rest of the pressure.
  4. Remove your chicken and add in the cauliflower florets to the pot with the sauce. Cover and pressure cook on high for zero minutes. Release steam and remove the cauliflower. Cooking it any longer will make them mushy.
  5. Serve the chicken cacciatore with the cauliflower, rice, pasta, or mashed potatoes, spoon some sauce over and garnish with parsley.
