Italian Wedding Soup is a hearty soup with mildly spicy Italian meatballs, kale, and rich broth made easy thanks to your Instant Pot! It's Gluten Free, Grain Free, Dairy Free, and Ultimately Delicious!
Other than being the best freezer friendly soup, which is why you must double this recipe! The ingredients are very simple and creates a very comforting soup for the chilly Autumn afternoons or those long days in the office.
Italian Wedding Soup Ingredients
Italian Sausage. Use Ground Sausage to make the meatballs. I don't bother adding anything to the meat since it already has hints of spices and the soup will be salty enough.
Veggies. Like Carrots, Onions, Celery, Garlic, and Kale. All these vegetables make this soup very nutritious and hearty soup.
Chicken Broth. You can make your own using the Instant Pot. (I have a recipe here.) Or buy some at your local grocery store.
Italian Seasoning. Italian Soup needs some Italian Seasoning. You can also add dry thyme, rosemary, basil, or any other dried herbs you have.
Salt and Pepper. The secret ingredient to any recipe.
Pasta. I used Cous Cous, but you can also use Orzo Pasta or Acini De Pepe Pasta.
Kale. Sure, this goes underneath veggies, but I had to write it again, because its one of the important and key ingredients in this soup.
Tips For Best Results
Meatballs. I absolutely love the flavor the Italian Sausage brings to this soup, but you could use ground beef for a more mild and less spicy soup.
Serving. Serve this with some sprouted bread (you can buy this at any Aldi grocery store.) Or serve with baked dinner rolls and garnish with some extra parmesan, if you're not lactose, or use some dairy free cheese!
How Long Will The Soup Last
Once the soup has cooled, transfer to a secure air-tight container. It will last fresh in the fridge for 5-7 days. The soup actually tastes even better on the second or third day, as all the flavor blend together.
Can I Freeze It
Yes. Like I've mentioned above, this recipe is great for meal prepping and freezing. Transfer to an air-tight container, label it, and freeze it for up to 3-4 months. To defrost, from leave in the fridge overnight.
