Paleo Fudgy Brownies (GF, DF)

Paleo Brownies are rich, moist, and so fudgy, you'll hardly realize that they're gluten-free and dairy-free because they're so decadent and that good! These brownies are very quick and easy to make when you're hungry for some of that late night dessert!

Top these brownies with some flaky sea salt, shredded coconut, or a scoop of vanilla ice cream! Then down them with a hot cup of tea or ice cold milk.

Achieving the Perfect Fudge

When it come down to brownies, I'm actually a cakey-kinda-brownie-girl, but these fudgy brownies caught my attention real quick! And not to mention, they're paleo, gluten-free, and dairy-free, with the right chocolate chips.

With these brownies, to achieve the perfect fudgy brownies, I've realize that they can't be too cakey, otherwise, you'll end up with a cupcake texture, and they can't be too dense either, because then, you might as well make fudge instead of brownies. They need to be the perfect balance of fudgy texture cut enough to lift to keep them light and moist.

Well, thank goodness for these Easy Paleo Fudgy Brownies!

8-12 Brownies



  1. Preheat oven to 350F.
  2. Oil or line your 8x9 inch pan with parchment paper and set aside.
  3. First, melt the chocolate chips and coconut oil together in a glass bowl over a double boiler, or in 20 second increments in the microwave. Stir to combine and set aside until ready to use.
  4. In large bowl, add the eggs, coconut sugar, cacao powder, tapioca flour, espresso powder and vanilla extract. Use a hand held mixer on low to blend the ingredients for 30 seconds. Or you can use a spatula.
  5. Add the room temperature melted chocolate to the mixing bowl with your batter ingredients. Mix thoroughly to combine.
  6. Add your shredded coconut, if using. Mix just to combine. You can also add a hand full of chocolate chips for gooey extra fudge brownies.
  7. Pour the brownie mix into your prepared pan and bake for 25-28 minutes. These brownies are best slightly undercooked rather than overcooked.
  8. Remove from the oven, and let the brownies cool for a couple minutes. Then cut, slice, and serve!

Recipe notes

  • To make this recipe dairy-free, I'd recommend using chocolate chip brand, such as Lily's Chocolate Chips, Hu Gems, or Bake Believe Chocolate Chips. Pro tip, Walmart started carrying sugar-free chocolate chips, so be be sure to check out their baking isle.
  • I've used Coconut Sugar in this recipe to make these brownies, paleo and refined sugar-free. You are welcome to use other sweeteners you have on hand, but you may not be paleo. Or check out my sugar blog post for more sugar-free substitutes.
